Ingredients:
• 250 g brown lentils, rinsed
• Salt
• 2 onions, chopped
• 2 – 3 cloves garlic, crushed
• Oil
• 250 g button mushrooms, halved
• 45 ml (3 tablespoons) masala
• 5 ml (1 teaspoon) ground cumin
• 1 can (400 g) tomato and onion mix
• Salt and pepper
• 45 ml (3 tablespoons) chopped coriander
• 4 bread rolls, end removed and hollowed out
Method:
- Cook lentils. Drain, season with salt. Fry onions and garlic in oil.
- Add mushrooms and fry until soft. Stir in spices.
- Add tomato mix, salt and pepper and cook until mixture thickens.
- Add lentils and coriander and simmer. Spoon into bread rolls.
