Ingredients:
• 3 cans (200 g each) tomato cocktail, chilled
• 1 red onion, roughly chopped
• 1 green pepper, roughly chopped
• 1 – 2 celery stalks, roughly chopped
• 45 – 60 ml (3 – 4 Tablespoons) olive oil
• 15 ml (1 tablespoon) Worcestershire
• Tabasco Sauce
• 15 – 30 ml (1 – 2 tablespoons) lemon juice
• Salt and freshly ground black pepper
Method:
- Blitz the tomato cocktail, onion, green pepper, celery, olive oil and Worcestershire sauce together until smooth.
- Season with Tabasco sauce, lemon juice, salt and pepper.
- Pour into glasses and serve with toasted cheese sandwiches.
