Ingredients:
• 500 g mince
• 60 – 80 ml (¼ - ⅓ cup) tomato paste
• 5 ml (1 teaspoon) paprika
• 2 ml (½ teaspoon) chilli flakes
• 2 ml (½ teaspoon) Tabasco sauce
• 1 – 2 cans (400 g each) baked beans
• 1 can (400 g) sweet corn
• 1 green pepper, chopped
• Sugar, salt and pepper
• 4 tortillas, cut into wedges, lettuce and cheese to serve
Method:
- Fry the mince. Mix in tomato paste, paprika, chilli and Tabasco, and fry.
- Add beans, corn and pepper. Simmer for 5 – 10 minutes.
- Add sugar, salt and pepper. Simmer for 5 minutes. Toast tortillas.
- Serve with mince, lettuce and cheese.
