Ingredients:
• 4 chicken breasts, cut into pieces
• Salt and pepper
• 2 – 5 ml (½ - 1 teaspoon)chilli powder
• 125 ml (½ cup) plain yoghurt
• 500 ml (2 cups) chicken stock
• 250 g bulgur wheat
• 6 spring onions, chopped
• Olive oil
• 30 g rocket
Method:
- Season chicken with salt and pepper. Mix chilli powder and yoghurt and pour over chicken.
- Marinate for 15 minutes. Add stock to bulgur wheat and leave until swollen.
- Heat oil in a pan and brown chicken in batches. Add marinade and all the chicken to the pan, cover and steam-fry until done.
- Toss bulgur wheat with spring onions and oil. Serve with chicken and rocket.
