Prep. & Cooking Time: 45 minutes
Ingredients:
• 2 chicken wings, 1 chicken breast, 1 chicken drumstick
• Cumin, chilli flakes, salt and pepper
• Olive oil or butter
• 30 ml yoghurt
• 50 g tatsoi (Japanese spinach)
• 4 Cherry tomatoes
• 50 g fresh coriander
• 4 potatoes
• Oil for deep-frying
• 30 ml chopped cashew nuts
Method:
- Debone the wings, rub with spices and braise slowly in olive oil or butter.
- Marinate the breast in the yoghurt and spices and grill for 8 minutes.
- Debone the drumstick, sprinkle with spices, stuff with tatsoi and roast for 20 minutes.
- Stuff the tomatoes with the coriander and drizzle with olive oil.
- Bake for 10 minutes. Parboil the potatoes, peel, slice and deep-fry until crisp.
- Sprinkle with cumin, salt, extra coriander and the nuts.
- Season with salt and pepper. Serve the chicken with the chips, roast tomatoes and a homemade tomato sauce.
