Ingredients:
• 15 ml (1 tablespoon) olive oil
• 250 g mushrooms, chopped
• 250 ml (1 cup) Greek yoghurt
• Salt and pepper
• 250 g penne pasta, cooked
• 1 cooked chicken, shredded
• 125 ml (½ cup) Parmesan cheese, grated
• 60 ml (¼ cup) breadcrumbs
Method:
- Preheat the oven to 230°C.
- Heat the oil and fry the mushrooms.
- Add the yoghurt and season with salt and pepper.
- Heat until it just comes to the boil.
- Mix in the pasta and chicken and spoon into a dish.
- Mix the Parmesan and crumbs, scatter over the pasta. Grill in the oven.
- Serve with mixed vegetables.
