Ingredients:
• 200 g mango, cut into ribbons or diced
• ½ cucumber, cut into ribbons or diced
• 45 ml (3 tablespoons) chopped fresh coriander
• 750 ml (3 cups) cooked rice (long-grain or basmati)
• 4 smoked chicken breasts, thinly sliced
Dressing:
• 30 ml (2 tablespoons) rice vinegar
• 20 ml (4 teaspoons) sesame oil
• Salt and freshly ground black pepper
Method:
- Mix (or arrange) all the ingredients for the salad except the chicken in a bowl or on a platter.
- Whisk together the dressing ingredients and pour over the salad.
- Toss if desired. Arrange the chicken on top.
