• 2 cups parsley, finely chopped
• ½ cup mint, finely chopped
• 2 medium onions, finely chopped (prefer green onions)
• 2 medium tomatoes, finely minced
• 3 tablespoons olive oil
• 3 tablespoons lemon juice
• ¼ teaspoon salt
• Red pepper and/or Paprika
• ¼ cup Bulgur (fine) there are two kinds of bulgur, thick and thin, you need the thin Bulgur for Tabbouleh.
Method:
- Put the bulgur in lukewarm water for ¼ hour (Just enough water to make ½ a cup)
- In a separate bowl mix the parsley and mint together, add the tomato and onions. Put the olive oil and the salt and lemon with bulgur and paprika and add to the dish mix them all together.
- Serve with meat and fried potatoes or when you follow the diet with lettuce or cabbage!
