Ingredients:
• 2 whole garlic bulbs
• Juice and grated zest of 1 – 2 lemons
• Salt
• 125 ml (½ cup) olive oil
• 8 chicken pieces
• 1 French loaf, broken into chunks
• Spring onions, chopped
Method:
- Peel the cloves of 1 garlic bulb and use a mortar and pestle to mash the garlic with the lemon and zest and salt.
- Add a little of the olive oil and brush the chicken pieces well with the mixture.
- Arrange the chicken in an ovenproof dish. Tuck the unpeeled cloves of the remaining garlic bulb among the chicken pieces.
- Pour over the lemon juice and remaining olive oil and bake at 180°C for about 45 minutes or until done and crisp.
- Squeeze the garlic puree onto the chucks of bread. Garnish the chicken with chopped spring onions and serve with the bread.
